The 4lb roast took longer than expected--I think next time I would let it sit out longer at room temperature. But it was delicious and tender, and I really appreciate this recipe!

This was excellent! My husband is Mexican and cooks fabulous food, I’m English and also think I have a pretty good palate. We live in the USA so have turkey for thanksgiving which I grew up with at Christmas in England so had to find an alternative. Well……. 12 years and I found this recipe. This is IT!

I always cook prime rib for Christmas Eve - but the store was out so they gave me a NY Strip tenderloin. I used this recipe - and it turned out great! Everyone loved it. I'm my toughest critic - and I have to admit, it was very good!

We decided to try a NY Strip roast for the family holiday meal this year.

Not. Disappointed. At all.

Was worried about drying out the roast, so we poured 2 cups of beef stock in the bottom of the pan, then used what was left for the au jus.

Outstanding. This made for one of my best holiday dinners yet. Served the roast with grilled asparagus & baked macaroni & cheese. We will be using this recipe again. Thank you!

Hi Lisa! I just made an 8 lb NY Roast last weekend for a gathering. It took 2.5 hours from the time I put it in the oven until it reached the desired temperature for medium doneness. I hope you all enjoy and have a very Merry Christmas 🙂

NY Strip is my favorite steak and in roast form it just gets better. I made this recipe last year for Christmas and I'm making again this year. I changed nothing because it's perfect. The au jus is the best ever. Follow the directions, use a meat thermometer and enjoy success!

Hi Susan! I really recommend using an oven-safe thermometer for best results, as ovens vary and the thickness of the steak will impact cooking. This will ensure you have perfectly cooked steak. I would estimate for a 2-pound steak you would need to cook it for 15 minutes at 450 degrees and then about 45 minutes at 350 degrees.

Hi Kirk! I am so happy to hear you enjoyed! I would store any leftover steak in an airtight container for up to 3 days, and the au jus in a separate container for up to 3 days as well. I personally find it is best to cut the leftovers into slices and sear quickly in a cast-iron stove and serve with warm au jus. You can also use to make a steak sandwich if desired.

I made the herb paste by using a garlic press and mixed in the other paste ingredients by hand. I baked it right away without letting it sit in fridge. So delicious - crust was awesome and it really made the roast extra special. Thanks for the recipe!
