In reply to Kate. Yes! I would suggest cooking the chicken, broth, carrots, and seasonings together and cook on LOW for 6 to 8 hours (or on HIGH for 3-4 hours). Remove the chicken to a cutting board, shred. Turn the slow cooker to high. Add the chicken and gnocchi to the slow cooker, along with the cream, mixed with cornstarch. Cook on high for 20-30 minutes or until the soup has thickened and the gnocchi is tender. Stir spinach in for the last 5-10 mins of cooking if using.

I made this tonight, and it is better than Olive Garden!!!
My son absolutely loved it, I just printed out the recipe, because I will be making this many more times.
My son said it would be a great dish to take to someone’s potluck, or if someone is feeling under the weather.
