I added way too much vanilla extract and syrup and ended up making a vegan White Russian mixer. Honestly, delicious with some extra vodka!

In reply to Jolene. Hi Jolene! I am thrilled you enjoy the flavor. It may solidify due to the fat content of your coconut milk--be sure to use coconut milk not coconut cream or cream of coconut. However, try blending in a blender to remedy what you have on hand.

In reply to Kristen Chidsey. You just need to warm it. I have tired blending coconut milk before as well. It doesn't work! It separates. Now I just pop the coconut milk in the micro for 40 secs and then mix the rest of the Ingredients.

Good recipe, but I would stick to Thai Kitchen coconut milk. Trader Joe’s brand coagulates while blending with maple syrup and vanilla extract.

In reply to Karen. Hi Karen! Trader Joe's has an organic canned coconut milk. I shake it really well before opening and typically it is well emulsified. If needed, blend first and then proceed with the recipe.

Thank you I will try this. I have organic Thai canned coconut milk from Costco which comes out water/and fat completely separate. If I blend it will it stay separated? How does the Trader Joe's brand come out of the can? Is it organic? Thank you!

In reply to Kristen Chidsey. Hi there. I just tried this and blended all ingredients. It separated into the liquid part and then chunks of white. I used full fat coconut milk and agave... could the agave do that?
