Enjoy the flavors of a Tagalong Cookie using just 3 ingredients! This no-bake recipe for Chocolate Dipped Peanut Butter Crackers is the easiest way to replicate the flavors of the beloved Girl Scout Tagalong Cookie at home.

During the holiday baking season, my mom always had me and my siblings join her in the kitchen to make our favorite Christmas cookies. The kids were in charge of rolling cut-out sugar cookies, laying out the saltine crackers for Saltine Toffee Bark, and spreading peanut butter on buttery round crackers to get the peanut butter crackers ready to be dipped into chocolate.
While I love all of the cookies we made during the holidays, these Peanut Butter Sandwich Cookies were my favorite, as they reminded me of Tagalong Cookies, which were my favorite Girl Scout cookies. In fact, to this day, I still refer to them as Copycat Tagalong Cookies. Made with peanut butter sandwiched between butter crackers and then dipped in rich chocolate, these peanut butter cracker cookies were everything I craved in a sweet treat.

Notes on Ingredients

- Butter Crackers: You can use Ritz Crackers or any round cracker. Personally, I opt to use brands without hydrogenated oils. Most stores carry an organic brand that is made without hydrogenated oils, or you can order them from amazon.
- Peanut Butter: Shelf-stable creamy peanut butter is best. Use a brand like Jiff, or an all-natural shelf-stable natural peanut butter is best for these cookies. The refrigerated natural peanut butter is a bit runny and won't spread on the butter crackers quite as evenly.
- Chocolate: While chocolate almond bark melts and sets up easily, I personally recommend using real dark chocolate or milk chocolate for the best flavor and less questionable ingredients. You can use chocolate bars cut into chunks or chocolate chips.
Recipe Modifications
- Dairy-Free Tagalongs: Use dairy-free chocolate chips and check the label of your crackers to make these treats dairy-free. Believe it or not, most butter crackers are actually dairy-free!
- Gluten-Free Tagalongs: Use gluten-free butter crackers.
- Peanut-Free Tagalongs: Swap the peanut butter out for almond butter or soy butter.
Tips for Making Homemade Tagalongs
While these no-bake peanut butter cracker treats are super simple to make and you can find detailed instructions in the recipe card, I do have a few tips to make the process easier.
- Recruit Help. There is a bit of tedious work when spreading peanut butter on the crackers, especially if you are making dozens of tagalong cookies. I find this is a great task to recruit helpers--think of your kids or grandkids! Not only does this make the process easier, but you are sure to make some sweet memories in the process.
- Melt more chocolate than you think you need. It will make the dipping process easier. You can stir raisins or nuts into any leftover chocolate and make chocolate-covered raisins or nuts so that nothing goes to waste.
- Use a narrow bowl for the chocolate. This will allow you to fully dip your cookie into the chocolate.
- Use a fork for dipping. Place the sandwich cookie onto a fork and then dip it into the melted chocolate. Tap the fork on the side of the bowl, letting the excess chocolate fall through the prongs of the fork back into the bowl.
- Use wax paper or parchment paper. Place the dipped sandwich cookie onto wax paper to harden it completely. Once hardened, the cookies will come right off the wax paper and the wax paper can be thrown away for easy clean-up.

Homemade Tagalong Cookies
Ingredients
- 60 Butter Crackers
- 1 pound quality milk chocolate
- 1 cup smooth peanut butter
Instructions
- Spread 30 of crackers with about 2 teaspoons each of peanut butter and top with additional cracker.
- Chop up chocolate into small morsels. Melt chocolate, in 30 second intervals, in microwave, stirring between heating and until smooth.
- Use a fork to dip each cookie into chocolate and then tap on side of bowl to shake excess off. Place on wax paper to harden and set.
- Once cookies are set up, store in an air tight container for up to 5 days in the refrigerator. These cookies can also be frozen for up 1 month.
