Crispy Sweet Potato Fries
After trial and error, I have finally perfected a recipe for homemade crispy sweet potato fries!
These are not soggy, soft, or limp sweet potato fries! They are super crispy--just the way good sweet potato fries should be.
The secret to achieving that crispy exterior is to coat the fries in cornstarch. Trust me on this, cornstarch is the magical ingredient that will help you make the most crispy Sweet Potato Fries, just like you get at restaurants!
While there are a few more steps to making perfect Sweet Potato Fries when compared to making traditional Oven Baked Fries, the little bit of extra effort is well worth the results.
How To Make Baked Sweet Potato Fries
Step One: Prepare and Soak Sweet Potatoes
I know you are about to ask--Do I really need to soak my sweet potato fries in water before baking?
The answer is YES. I am all about shortcuts, but if you want crispy sweet potato fries, you really do NOT want to overlook this step.
- Peel sweet potatoes.
- Cut into ½-inch sticks.
- Place sweet potato fries in a large bowl and cover with cold water.
- Soak for at least 60 minutes.
Pro Tip: Cut up sweet potato fries the night before you plan to serve them (while you are prepping dinner the night before or meal-prepping for the week) and leave your sweet potato fries to soak in cold water in the fridge for up to 3-4 days.

Step Two: Preheat Oven
Another crucial tip to crispy sweet potato fries is to bake the fries on a pre-heated greased baking sheet. This acts almost like a fryer to immediately sear the outside of the sweet potato.
- Pour 1 tablespoon oil on a large rimmed baking sheet and brush evenly with a pastry brush. If you are making more than 4 servings, you will need to prepare 2 baking sheets, as you don't want your fries to be over-crowded and steam on the baking sheet.
- Place pan in the oven while the oven is preheating to 425 degrees.
Step Three: Coat Sweet Potatoes
Now it is time to drain and coat sweet potato fries--this is CRUCIAL for crispy fries, plus the seasoning is perfection!
- Drain sweet potatoes from water and dry them thoroughly. Tip: Use a clean kitchen towel to really dry the fries well--you don't want ANY water left on your sweet potato sticks.
- In a gallon-size bag, toss cornstarch with seasonings. Add fries and toss to coat.

Step Four: Bake Sweet Potato Fries
- Carefully remove the heated pan from the oven.
- Take fries out of the mixture, shaking off excess, and place evenly on a baking sheet, being sure to leave space around each fry. And you REALLY want to be sure you get rid of the excess coating so your fries don't turn out gummy!
- Bake for 20 minutes, then flip the fries, and bake for an additional 10 minutes.

Step Five: Season Sweet Potato Fries
While we did already season our fries, we did not salt them--this is another tip to keep them crispy and crunchy!
- Generously salt fries after they have cooked.
- Serve warm and crispy with ketchup, BBQ Sauce, or Ranch Dressing.

Reheating Sweet Potato Fries
We rarely have leftover sweet potato fries, but on the off chance you do, store them in an airtight container for up to 4 days. When you are ready to reheat, place them on a baking sheet and crisp up the fries for 10-15 minutes at 425 degrees F.
To Freeze Sweet Potato Fries, bake them as directed and allow them to cool completely. Store in a freezer-safe bag for up to 3 months. To bake, place frozen fries in an even layer on a baking sheet and bake for 25 minutes at 425 degrees F, flipping after 15 minutes.
Remember these Pro-Tips for Crispy Sweet Potato Fries
- Soaking the sweet potatoes is a MUST to remove excess starch from the potatoes, this tip will help tremendously in achieving crispy sweet potatoes.
- Be sure to use canola, vegetable, peanut, or coconut oil to cook these sweet potato fries, as those oils have a high smoking point which is necessary when baking at such a high temperature. Olive oil will not work for this recipe.
- Do not salt the fries until AFTER baking.
- Use any seasonings you like in the coating--just be sure to leave the salt OUT!

Olive oil is perfectly fine for this. Despite a lower smoke point, the high antioxidant and low polyunsaturated fat content actually keeps it more stable at high temperatures than other oils, and it's much healthier. It's not only ok to use, it's better.
I look forward to trying this. I've been wondering why I can't make homemade sweet potato fries that aren't soggy.
